In the south some dishes simply have to be on the table, and anchovies in vinegar come first. If you are in Estepona, you will find them at La Palma every day.
We are in the old town of Estepona, on calle Terraza, a few minutes from the marina and the beach. Fish and seafood of the day are what we do, so boquerones en vinagre have never left the menu.
We clean and bone them by hand, one by one, with the patience such a small fish asks for. Then they go into a dish with vinegar and we let them marinate slowly. They are served with olive oil, garlic and parsley.
They arrive in a generous plate, and they make most sense with a very cold beer or a glass of white wine beside them. On a summer afternoon, on the terrace on Plaza del Huevo, it is hard to order anything else.
Beyond the boquerones, the menu has fish of the day, seafood, rice, Iberian pork and salads. All in the old town of Estepona, with the bar full and the square in front.
